Apple Compote Organic

What is in this compote exactly?

Apple purée from organic farming, at 100%, and nothing else. Kazidomi compote gets no sugar, no water, no starch and no flavouring: the sugars in it are the ones the fruit brought. The apples come from French orchards and the jars are filled in France as well.

Plain apple compote or a flavoured one?

The plain apple from Kazidomi is the neutral base: one fruit, a clean taste, and no constraint when you cook with it. The apple and pear, apple and vanilla or apple and red fruit versions add a second flavour and lean towards pudding. To bind a batter or stand in for a fat, plain is the one.

How do I use it in baking?

It replaces part of the fat or the sugar in a cake, a sponge or muffins, volume for volume. Kazidomi apple purée also binds egg-free preparations, makes the base of a stewed fruit cooked up with cinnamon, or gets spread over a tart case before the fruit goes on.

Why does the colour vary from one jar to the next?

Because there is only apple in it. The shade, from pale beige to golden brown, depends on the variety picked, on how ripe it was and on the cooking time. Kazidomi adds no colouring and no acidity regulator to even the appearance out: these differences between batches are normal.

How do I store it?

The 915 g jar keeps before opening somewhere cool and dry, out of the light. After opening, Kazidomi says to move it to the fridge and finish it within five days. The large format also freezes in portions, in an ice cube tray, so you take out only what you need.
