The flageolet bean contains proteins, fibres and vitamins and complex carbohydrates that advantageously replace simple carbohydrates. The flageolet is part of the legume family, so it is a good quality food to include in your daily ration if you are vegetarian or vegan to ensure a good supply of vegetable protein.
RECIPE: Soak 250gr of flageolets in water the day before. Drain and cover with 1.5 litres of cold water. You can add a handful of Provence herbs. Bring to a boil and cook over low heat for 2h30 in a covered saucepan. Add the salt at the end of cooking. If necessary, add boiling water during cooking. Excellent when cooled, to garnish salads.
