Ingredients

  • 1 chopped onion
  • 2 minced garlic cloves
  • 500 g red lentils
  • 1.5 L vegetable broth
  • 400 ml coconut milk
  • 2 to 3 tbsp Madras curry powder
  • 5 tbsp chopped fresh coriander
  • Olive oil

Recipe

  1. Sauté the onion and garlic in 1 tbsp of olive oil.
  2. Add the curry powder and mix well.
  3. Add the lentils and broth.
  4. Cook for 10–15 minutes.
  5. Add the coconut milk and fresh coriander.
  6. Enjoy!
