Small bunch of frozen mint and parsley, finely chopped
For the dressing:
2 tablespoons extra virgin olive oil
Juice of ½ lemon
Black pepper and sea salt
1 teaspoon tahini (or to taste)
Recipe
Mix the chickpeas with sweet paprika, garlic powder, and sea salt. Coat well and bake in the oven or cook in an air fryer at 180°C (356°F) for 15 minutes, until crunchy.
Heat olive oil in a pan and sauté the tofu cubes until lightly golden. Add yacon syrup and cook over medium-high heat until the tofu is nicely golden and slightly crispy.
Combine all salad ingredients in a large bowl: spinach, cucumber, avocado, red onion, goji berries, mint, and parsley.
Mix the dressing ingredients and adjust seasoning to taste.
Add the crunchy chickpeas and turmeric tofu to the salad. Pour the dressing over, mix well, and enjoy.
