Vegan and gluten-free Yule log

Enjoy this delicious vegan Yule log during your Christmas meal.
Ingredients
For the biscuit:
- 40g coconut oil
- 100g buckwheat flour
- 60g coconut blossom sugar
- 90ml plant-based drink (coconut, almond)
- ⅕ teaspoon baking powder
- 1 pinch vanilla powder
For the mousse:
- 200g baking chocolate
- 250ml whole soy cream
- 30g aquafaba
- 30g coconut blossom sugar
- 1 drop lemon juice
- 1 pinch salt
Recipe
- For the chocolate mousse: In a mixing bowl, whip the aquafaba and plant-based cream into stiff peaks.
- Add the salt and lemon juice, and continue whisking until the cream doubles in volume.
- Melt the chocolate in a double boiler.
- Gently fold the melted chocolate into the whipped cream and continue whisking while adding the sugar.
- Whisk until the whipped cream is firm and place in the refrigerator.
- Preheat the oven to 180°C (350°F).
- For the biscuit: In a mixing bowl, combine the flour, sugar, and baking powder.
- Melt the coconut oil and add it to the mixture.
- Add the plant-based drink of your choice and mix. The batter should be fluid.
- Pour the batter onto a long baking tray lined with parchment paper. Bake for 10 to 15 minutes.
- As soon as the biscuit is out of the oven, flip it onto a slightly damp tea towel, remove the parchment paper, and roll it up while it's still warm with the tea towel.
- Let it cool down (but not completely cool) like this.
- Unroll it and fill the biscuit with the chocolate mousse. Roll it up again and wrap it in plastic wrap before placing it in the fridge.
- Decorate your Yule log as you like (with powdered sugar, crushed hazelnuts, chocolate, etc.).
