Ingredients

  • 1 pumpkin
  • 1 packet of quinoa
  • 50 g dried apricots
  • 25 g sliced almonds
  • 2 garlic cloves
  • 2 onions
  • 1/2 teaspoon paprika
  • 1 teaspoon coriander
  • 1 tablespoon Herbes de Provence
  • 500 ml Chicken Turmeric broth

Recipe

  1. Cut the pumpkin into slices, place them on a baking sheet, drizzle with olive oil and salt. Roast in the oven at 160°C for about 20 minutes.

  2. In the meantime, peel the garlic and onions, and sauté them in olive oil for about 5 minutes.

  3. Add the quinoa and the chopped dried apricots. Pour in the broth and let it cook for 20 minutes.

  4. Once cooked, add the roasted pumpkin slices and sliced almonds, season to taste, and enjoy!
