  • 250g of orzo pasta
  • Black olives
  • A few red onion pickles
  • 1/2 cucumber
  • Around 15 cherry tomatoes
  • A few sprigs of chives
  • A few sprigs of dill
  • Olive oil
  • Vinegar
  • Optional: black olive tofu

Recipe

  1. Cook the orzo pasta according to the package instructions (approx. 10 min).
  2. Chop the tomatoes, olives, and cucumber.
  3. In a large bowl, combine the cooled orzo with the tomatoes, cucumber, olives, and red onion pickles.
  4. Optional: add diced black olive tofu.
  5. Prepare a vinaigrette with olive oil and vinegar.
  6. Finely chop the chives and fresh dill.
  7. Pour the vinaigrette and herbs over the salad.
  8. Mix well and enjoy!
