  • 200g cashew nuts
  • 2 dried tomatoes
  • A little bit of Passata
  • Herbs of Provence
  • 1 tsp of mashed garlic
  • A bit of mineral water
  • A little glass of extra virgin olive oil
  • 1 or 2 tbsp of malted yeast
  • Salt & pepper


  • Preparation time : 3 hours + 5 minutes

  • 1 bowl of cashew cheese


  1. Soak 200g of cashews for 3 hours minimum or overnight.
  2. Place the nuts in your blender with two dried tomatoes cut in small pieces, herbs of Provence according to your taste, a pinch of salt and a blow of pepper mill, a bit of water, a bit of Passata and the olive oil.
  3. Add 1 or 2 tablespoons of malted yeast to give a nice cheese taste.
  4. Mix everything together until the desired consistency is achieved. Check the seasoning, rectify and enjoy!
