Soya contains vitamin E, which is necessary for the body as a protector of cellular tissues, and vitamins of the B group (B1, B6, B9 and biotin) used in particular for the assimilation of the various macronutrients (proteins, lipids, carbohydrates) that make up the plant cell wall and contribute to our well-being. As it only passes through the digestive tract, fibre does not provide calories. Soya's insoluble fibres help to regulate transit and fight intestinal laziness, while soluble fibres play a preventive role in cardiovascular diseases.
RECIPE: Soak 250gr of soya fibre/protein the day before in a marinade made up of 1/4 litre of water, 1/2 glass of white wine, 2 bay leaves, 1 bouquet garni, 3 tablespoons of Shoyu, minced garlic and juice of a lemon. Drain. Fry over high heat in a base of olive oil with 2 onions and 1 clove of garlic, celery and 1 finely chopped carrot. Serve with a mushroom sauce.
