Soya contains vitamin E, which is necessary for the body as a protector of cellular tissues, and vitamins of the B group (B1, B6, B9 and biotin) used in particular for the assimilation of the various macronutrients (proteins, lipids, carbohydrates) that make up the plant cell wall and contribute to well-being. As it only passes through the digestive tract, fibre does not provide calories. Soya's insoluble fibres help to regulate transit and fight intestinal laziness, while soluble fibres contribute to a better balance of the cardiovascular system.

RECIPE: Soak 250gr of soya fibre/protein the day before in a marinade made up of 1/4 litre of water, 1/2 glass of white wine, 2 bay leaves, 1 bouquet garni, 3 tablespoons of Shoyu, minced garlic and juice of a lemon. Drain. Fry over high heat in a base of olive oil with 2 onions and 1 clove of garlic, celery and 1 finely chopped carrot. Serve with a mushroom sauce.
