Manuka honey is a rare and unique honey from New Zealand. Unlike other honeys, it possesses a unique activity called "non-peroxidic activity", measured by the Activity and authenticity Index (IAA®). Methylxlyoxal (MGO) is one of the molecules responsible for this activity. The higher the IAA index, the greater the activity of the honey.
