Gerst heeft zeer interessante eigenschappen: rijk aan mineralen : magnesium, fosfor, koper en vezels, die bijdragen aan het reguleren van de spijsvertering. In tegenstelling tot tarwe of rogge, heeft gerst een velletje dat niet verteerbaar is. Dit velletje wordt verwijderd door lichte wrijving. Gerst is lekker in soepen, in salades of met groente. Of te gebruiken als rijst in stoofschotels met groenten of vlees of tofu of andere vleesvervangers. U dient een glaasje gerst per persoon te doseren en u moet het een nacht laten weken in schoon water, waarna u de gerst kookt in 3 keer zijn volume water, gedurende 1h30.
Instructions
Mix 1 volume of barley with 2 volumes of boiling water and simmer for 1 hour (45 minutes with a pressure cooker) To store in a cool and dry place
