Arrow root is a thickener that mainly consist of starch that doesn’t contain any gluten. It has anti-inflammatory qualities and it helps against acid reflux. In the kitchen it is used to thicken sauces, soups and cream desserts. When baking, you can also replace part of the flour by arrow root, to make your pastries lighter and smoother.
