Pistachio puree from Jean HERVE, is made with air-dried pistachios that have been ground at low temperatures, in order to keep its nutritional values and its strong flavours. This puree is diluted with water and is best mixed with almond puree. It can be used in savoury dishes, in sauces but of course also in sweet dishes like macaroons, creams and ice-creams.
