Cook the quinoa in twice its volume of water.
Cut the bell pepper, the tomatoes, the cucumber and the onion.
When the quinoa is ready, mix it with the vegetables and the other ingredients. Keep some of the parsley and coriander tu put on top of the salad at the end.
Serve the preparation in glass jars with the rest of parsley and coriander.
