The dried vegetable is harvested at maturity while the fresh pea is harvested before maturity. It is a source of dietary fibre, as well as protein, making it a nutritious food.
RECIPE: Pea purée: Soak 250gr of washed dried peas the day before. Drain and cover with cold water, bring to a boil and cook gently for 30 minutes. Add 1 chopped onion and a clove of garlic, leave another 10 min. on the heat. Empty the remaining cooking water, add olive oil, salt and pepper and mix. Add fresh mint leaves to this purée.
