All Kokoji recipes are prepared in our workshop in Estillac, near Agen in Lot-et-Garonne. They are based on raw ingredients, unrefined, naturally gluten and vegan. To make crisp and gourmet nuggets without added sugar and no added fat, we are inspired by raw food techniques. These are based on three principles:
Unrefined and carefully selected ingredients by focusing on the local (from Aquitaine region where we settle) and French
Buckwheat seeds soaked for several hours to activate germination and boost vitamins, minerals and enzymes
Low temperature dehydration
Low temperature dehydration to preserve the nutritional and taste qualities of the ingredients
