This tasty vinegar made with Umeboshi juice, (a Japanese apricot that has been fermented in a salty liquid) is a versatile condiment, great in salads, with cooked vegetables and in marinades. Umeboshi is naturally salty so it can replace table salt which will help to reduce the use of salt.
